Paleo Toasted Coconut Hemp Seed Bars

Wow. One of the best bars I've ever had, and so damn easy to make. Crispy because of the toasted coconut, yet chewy because of the nut butter, honey and chocolate.  A MUST try!

Wow. One of the best bars I've ever had, and so damn easy to make. Crispy because of the toasted coconut, yet chewy because of the nut butter, honey and chocolate.

INGREDIENTS:

  • 1 1/2 cup unsweetened shredded coconut, toasted till golden brown

  • 1 cup nut butter (feel free to mix)

  • 1 cup hemp seeds

  • 1/3 cup honey

  • 1 tsp cinnamon

  • 1/3 cup dark chocolate (I used Lily’s stevia-sweetened chocolate chips)

INSTRUCTIONS:

  1. Pre-heat the oven to 325F and line an 8x8 baking dish with wax paper.

  2. Spread the shredded coconut on a baking pan and bake for about 5-10 minutes until golden brown (stir around halfway). Meanwhile, put everything else except the chocolate together in a bowl, then add in the toasted coconut and mix.

  3. For the chocolate: I mixed it in while adding the toasted coconut, which melted the chocolate because of the heat. By stirring it in, it became more of a chocolatey, fudgey bar. If you’d like the chocolate chips to be visible on top of the bar, you can cool the coconut before mixing everything together then press the chocolate chips onto the mixture in the pan.

  4. Once the mixture is pressed well into the pan, refrigerate for at least 3 hours.

  5. When set, I cut the bars into 25 small squares, and I calculated these bars to be at about 100 calories each! Make sure they are kept refrigerated.
